Mediterranean-Style Three Bean Chilli

This spicy Three Bean Chilli is a Mediterranean take on the traditional Chilli Con (or Sin) Carne that is so easy to make, and ready in well under thirty minutes, prep included. It is savoury, tasty, uses healthy fats, technically three of your five-a-day, full of natural protein and fibre, and low-carb. This recipe is really low-maintenance and quick, ideal for a mid-week meal. Plus it saves well for the next day, so you can double up and make a portion for lunch too! Naturally vegan, gluten-free and bursting with powerful ingredients, this recipe serves two so adjust accordingly if needed. This Three Bean Chilli may not look the prettiest at first glance but it tastes gorgeous and is so good for you. It works perfectly paired with a pitta bread!

Ingredients:

> 3 Tins of Different Beans/Legumes, drained and washed – I mainly use Red Kidney Beans, Black Beans, Cannelloni Beans, or Butter Beans. However, it’s always good to try new combinations.

> 8 TBSP Olive Oil.

> 2 Bay Leaves.

> 2-3 TSP Ground Black Pepper.

> 4 Garlic Cloves, crushed or chopped finely.

> 2 TBSP Oregano.

> 2 TSP Cayenne Chilli.

> 2 TSP Smoked Paprika.

> 1 TBSP Ground Cumin.

> 2 TSP Cumin Seeds (Or more Ground Cumin).

>1 TSP Salt.

> 2 TSP Lemon Juice.

Method:

1) Throw your chosen legumes into a wok (a sauce pot will work too,
but a wok is best) along with all the other ingredients, and stir well.
2) Cook the mixture on a low heat, stirring often, until piping hot throughout. This usually takes between 15-20 minutes. If needed, add more olive oil. This is your only liquid and forms a nice, thin sauce when combined with the other ingredients.
3) When heated properly, remove from the hob and serve. It really is that easy! Bon Appetit.
