Vegan and Gluten-Free Fakeaway Piri-Piri Rice Box

This fabulous Fakeaway Piri-Piri Rice Box may look messy, but it is absolutely delicious. For all those that love a cheeky Nando’s or a Pepe’s, this is a vegan and naturally gluten-free recipe you can whip up at home in well under an hour. It is a one-pot dish, so easy to make, and it is a lot healthier than a traditional takeaway of the like! I’ve used Quorn Pieces in this one but you could always use another meat substitute, tofu, or even paneer if you don’t adhere to a vegan diet. A pitta bread also works really well alongside it if you fancy doubling up on carbs.

Deeply savoury and filling, this recipe serves two. Adjust to make what you need because unfortunately this dish is no good to freeze, and as you may have heard before, rice can be risky to leave around for a long time. All in all, this meal takes around 45 minutes – but happily, most of that consists of just leaving it alone to do its own thing. Thus, it’s another low-maintenance meal perfect for any day of the week!

Ingredients:

> 1 TBSP Vegan Butter

> 8 Cloves

> 2 TSP Chilli Powder (Ideally Cayenne)

> 4 TBSP Piri Piri Seasoning

> 1 TSP Lemon Juice

> Quorn Pieces (Optional)

> 160g Peppers

> 1 TSP Soy Sauce

> 1 TSP Ground Black Pepper

> 4 TSP Parsley

> 1 TSP Turmeric

> Vegetable Stock

> 2 Garlic Cloves

> 2 Portions of Rice

Method:

1) In a wok/skillet, melt the butter over a medium-low heat and then add your rice. Leave for two minutes, stirring very frequently to prevent the rice from sticking. As a side note, which type of rice you use is entirely up to you. I used long-grain brown rice in this recipe.

2) Add in the cloves, pepper, piri-piri, soy, lemon juice, chilli, turmeric, vegetable stock cube, garlic and parsley. Leave for five minutes, stirring very often.

3) Cover the rice with water. Ensure there is a lot of excess water so it can be soaked up by the rice. At this point, you should also add your peppers in and your Quorn Pieces/meat alternative if using.

4) Bring the mixture to the boil on a high heat, leave for five minutes, and then reduce to a medium heat and simmer for around 30 minutes. Stir regularly. The rice should be tender and the water should have been soaked up, leaving a saucy mixture behind. When this is achieved, serve and enjoy. Bon appétit!
